Half Beef

Here's your chance to stock up on approximately 209 pounds of frozen beef from Stuart Ranch, Oklahoma's oldest ranch under continuous family ownership! On average, a Half 7S Beef equals 836 (4oz) meals for you and your family.

Our family's cattle program ensures our whole animals reach an average live weight of 1,200-1,300 pounds. We do this by grass-feeding from day one and grain-finishing in a feed yard for a minimum of 150 days. You can learn more about our cattle program here

We strategically cross our Corriente bulls with our beef heifers for calving ease purposes. This specialty cross guarantees proportional and lean cuts, lessening the excessive waste factor that far too often accompanies beef products. All the meat in your Half Beef will be sourced solely from one animal in our herd, something that can't be said of grocery store options.

Our Half Beef comprehensive assortment of cuts offers versatility in cooking, and is suitable for grilling, roasting, slow cooking, and more. This offer is based off a standard cut sheet. You can expect to receive the following cuts:

(9)  Ribeye Steaks (10) New York Strips
(5) Filets (6) Sirloin Steaks
(2) Chuck Eye (14) Cube Steaks
(1) Skirt Steak (2) Neck Roast
(1) Tri-Tip (4) Chuck Roast
(2) Rump Roast (1) Brisket
(1) Stew Meat (1) Fajita Meat
(4) Short Ribs (4) Osso Bucco
79.5 lbs. Ground Beef

Purchasing the Half Beef requires freezer space or a friend to split the bounty. You’ll need about one cubic square foot of freezer space for every 30-35 lbs. of cut and wrapped beef.

Deposit

The price listed online is a non-refundable deposit of $1,000 required to secure your order. This payment is near half of the total average hot/hang weight. You must be prepared to pay the remaining hot/hanging weight balance IN-PERSON at pickup.

Our typical hot/hang weight for a half beef is 376 pounds, and the current price per pound of hot weight is $4.75.

The remaining balance due at pick up will be close in value to the initial down payment, but will fluctuate between $800-$1,200 due to variance in hot/hanging weight. We aim to keep our animals' live weights within a 100 pound variance of each other, knowing weight averages out to a 36% yield freezer to live.
